Their sweetness and pure goodness is what gardening is all about. So do eat them raw in all your fresh salads and recipes.
My favourite recipe to keep tomatoes for later in the year is quick and easy. The whole tomato is used so there is no wastage. Roasting tomatoes this way gives you a wonderful winter sauce for all your soup, pasta and casseroles. Great to freeze in meal portions. Just so delicious.
1/4 cup tomato puree
2 tbsp. brown sugar
2 tbsp. olive oil
2 cloves garlic
1 tsp. fresh rosemary finely chopped
1/2 tsp. smoked paprika
1/2 tsp. chilli flakes
1 tsp. salt
Black pepper to taste
Cut vegetables into wedges and spread out evenly in a large roasting dish.
Puree all the other ingredients together and mix this through the vegetables.
Roast at 160c for about one and a half hours or until the vegetables start to caramelise.
